Mực sau khi xé sợi nhỏ, ướp với 1 muỗng canh rượu trắng, 1 muỗng canh dầu ăn, gừng và 1/2 muỗng canh đường để khoảng 15-20 phút cho mực thấm gia vị. Đặt nồi lên bếp, khi dầu nóng già cho chỗ tỏi bằm ở trên vào phi thơm. Tỏi vàng đều, nhanh tay vớt riêng ra đĩa. Sau đó cho mực đã ướp gia vị ở trên vào chiên vàng, vớt ra đĩa có lót giấy thấm dầu để loại bỏ bớt dầu.
Pha nước chấm trộn gỏi từ 2 muỗng canh nước mắm, 1 muỗng canh đường đường, ớt băm (có thể thêm một ít nước cốt chanh tùy thuộc vào độ chua của xoài). Cho xoài vào tô, rưới nước mắm đã pha ở trên vào, đảo đều để khoảng 2-3 phút cho xoài ngấm gia vị. Sau đó, cho mực khô, đậu phộng, rau răm cắt nhỏ trộn đều, cho ra đĩa và rắc tỏi phi lên trên là được.
